Easy, Healthy Banana Muffins

We always seem to have bananas that get too ripe before we have a chance to eat them. I peel them and put them in the freezer and pop them in smoothies or defrost and mash them for muffins. One of my favourite ways to use up ripe bananas is this delicious, healthy muffin recipe.

Ingredients

  • 1 ½ cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 large mashed bananas
  • ½ cup sugar
  • ⅓ cup melted butter
  • 1 egg
  • 1 tbsp hemp hearts
  • 1 tbsp chia seeds

Method

  • Preheat oven to 350 degrees F
  • Grease muffin pan with butter or coconut oil
  • Combine ingredients and stir until mixed
  • Scoop batter into muffin pan
  • Bake in preheated oven for 20-25 minutes

Optional mix-ins:

  • ¼ cup chocolate chips
  • ¼ cup chopped walnuts

Makes 12 muffins.
