The Best Vegan Chili

There’s something satisfying about a bowl of chili on a cool day. This delicious vegan chili recipe is a a family favourite!
Ingredients
2 tablespoons of olive oil
1 white onion, chopped
3 garlic cloves, minced
3 sweet peppers diced
4 celery stalks, chopped
1 jalepeno pepper, chopped
2 bay leaves
1 teaspoon ground cumin
2 tablespoons dried oregano
1/4 cup chili powder
2 x 16oz packages of Beyond Beef plant-based ground
3 x 28oz cans of whole peeled tomatoes, crushed
15oz kidney beans
15oz black beans
15oz chickpeas
15oz whole kernel corn
Directions
- Heat the olive oil in a large pot, stir in garlic, onion, oregano, cumin and bay leaves, stir until soft.
- Mix in sweet peppers, jalapeno peppers, and celery.
- Add Beyond Beef plant-based ground. Cover and simmer for 5 minutes.
- Mix in tomatoes, chilli powder, kidney beans, black beans, and chickpeas.
- Bring to a boil, reduce heat and simmer for 45 minutes.
- Stir in corn.
Toppings:
- Grated cheddar cheese
- Sour cream or crème fraîche
- Sliced or diced avocado
- Tortilla chips
- Cilantro
- Lime wedges
