Easy Vegetarian Enchiladas

OK. Rocco’s Taco’s is literally my favourite of all time. I wish they had locations in Canada. If you love Mexican Food like I do, this is your spot but you’ll have to travel to the US to get it. I recently made an attempt to recreate their enchilada’s. It is super easy and my whole family loved them! If you have kids you know how hard it can be to find something everyone loves.
Veggie Enchiladas:
- Cook 2 cups of rice
- Sauté 2 peppers, 1 onion, 1 pack mushrooms in olive oil until soft (zucchini would be good too-anything you would put in a fajita)
- Take 12 soft taco shells (tortillas) either corn or flour
- Fill with a mix of black beans (or refried beans, both are delicious) and whatever cooked veggies you made
- Layer a baking dish with the cooked rice
- Roll soft tacos, place in dish
- Cover with enchilada sauce (I used Frontera, if you have a good recipe- please share!)
- Smother with cheese and bake at 400 degrees F for 30 minutes
- Serve with your favourite toppings like diced avocado, sour cream, pico de gallo, guacamole, salsa, freshly chopped cilantro and jalapeños.
Delicious!
