Chewy Ginger Molasses Cookies

These ginger molasses cookies are perfectly crispy on the outside, and deliciously chewy on the inside. Nothing says “I love you” like a batch of homemade cookies right out of the oven!
Ingredients
- 4 1/2 cups of all-purpose flour
- 2 cups sugar (plus 1/2 cup for rolling)
- 1 1/2 cups softened butter (unsalted)
- 1/2 cup molasses
- 2 eggs
- 4 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 tablespoon ground ginger
- 1 tablespoon ground cloves
Instructions
- Mix flour, baking soda, cinnamon, ginger and cloves, set aside
- Using a stand or hand mixer, cream softened butter and sugar together gradually
- Add molasses and eggs beat until combined
- Gradually add dry ingredients until mixed
- Cover dough and refrigerate for at least 30 minutes (ok to cool overnight)
- Preheat oven to 350 degrees F
- Line baking sheets with parchment paper
- Roll dough into balls about 1 inch in diameter
- Fill a small bowl with sugar and roll each ball into sugar until coated
- Place balls on baking sheet
- Bake for 10 minutes
- Remove from oven, cool, and enjoy!
