Vegan Lentil Soup

This soup is delicious, easy to make and bursting with flavour. Lentils are a great plant-based source of protein and iron. They are inexpensive and an excellent meat alternative.
Ingredients
- 2 tbsp olive oil
- 3 cloves of garlic minced
- 1 onion diced
- 2 carrots sliced
- 5 cups of vegetable broth
- 1 cup dry brown lentils
- 3 bay leaves
- Salt and pepper to taste
- Lemon wedges
- Chopped parsley for garnish
Instructions
- Heat olive oil in a large pot over low heat
- Add the minced garlic, carrots, and onion until the onion turns clear
- Add the vegetable broth, bay leaves, lentils, and salt and pepper
- Reduce heat and simmer for about 40 minutes until the lentils are soft
- Serve and add salt and pepper to taste
- Squeeze the juice of lemon wedge into the soup (optional but delicious!)
- Garnish with freshly chopped parsley
Serve with crusty bread, and enjoy!
