Lentil Soup in Bowl with Lemon

This soup is delicious, easy to make and bursting with flavour. Lentils are a great plant-based source of protein and iron. They are inexpensive and an excellent meat alternative.

 

Ingredients

  • 2 tbsp olive oil
  • 3 cloves of garlic minced
  • 1 onion diced
  • 2 carrots sliced
  • 5 cups of vegetable broth
  • 1 cup dry brown lentils
  • 3 bay leaves
  • Salt and pepper to taste
  • Lemon wedges
  • Chopped parsley for garnish

Instructions

  • Heat olive oil in a large pot over low heat
  • Add the minced garlic, carrots, and onion until the onion turns clear
  • Add the vegetable broth, bay leaves, lentils, and salt and pepper
  • Reduce heat and simmer for about 40 minutes until the lentils are soft
  • Serve and add salt and pepper to taste
  • Squeeze the juice of lemon wedge into the soup (optional but delicious!)
  • Garnish with freshly chopped parsley

 

Serve with crusty bread, and enjoy!
